Green Soup with Roasted Garlic⠀⠀

Updated: Apr 13, 2021

Recently bought Russian Kale from the farmer’s market. If you haven’t used it before and you come across it do try. Looks spiky and tough but if you shred it and stir fry in some garlic butter.... wow!! Or steam, also delicious. ⠀⠀

I’ve added it to my soup as I did over buy the Russian kale this week 😂⠀⠀

Of course, as per previous posts, garlic is wonderful medicinal food to boost the immune system. This is a lovely way to add garlic into your cooking. Roasting reduces the strength of taste, so don’t be afraid of the 2 whole bulbs!⠀⠀

Recipe: ⠀⠀

2 onions⠀⠀

2 sticks celery⠀⠀

1 bunch Russian Kale⠀⠀

~300g frozen peas⠀⠀

A few sprigs of parsley⠀⠀

1 veggie stock cube⠀⠀

Salt & pepper to taste⠀⠀

2 whole garlic bulbs roasted for an hour in foil⠀

*Scroll across for video on roasted 🧄 ⠀⠀

📝Fry the onion and celery in a drizzle of oil for a few mins.⠀

📝Add the chopped kale, peas, parsley and stock.⠀

📝Simmer for 10 mins.⠀

📝Add the squeezed garlic.⠀
