Homemade Hummus

⚖️Chickpeas are something I talk about a lot, for their incredible phytoestrogen qualities, an amazing nutritional food to support hormone balancing especially during peri-menopause. ⠀

📢But today I am thinking about how far DRIED chickpeas go! ⠀

🛒They are very cheap, go a long way, and are an excellent source of protein. They also don’t take up nearly as much room as loads of tins, and perhaps we have a bit more time on our hands to consider doing something like soaking beans overnight, or sprouting! So why not take this opportunity to “make your own” this weekend!

Ingredients:

250g dried chickpeas

1 tsp bicarbonate of soda

270g light tahini paste

1/2 lemon squeezed

2 - 4 cloves of garlic, crushed (depending on your taste)

100ml iced water

1/2 to 1 tsp salt (start with a little & add more if necessary)

Instructions:

Cover the chickpeas in water & leave overnight.  The next day, drain chickpeas, put back in the pan, add the bicarb of soda & cook for 3 mins, stirring all the time. Then cover with water & bring to the boil. Cook, skimming off the foam on the surface. After 20 mins check the chickpeas, they should break up easily between your fingers. May need another 10-20 mins cooking.

Drain & place in blender with all the other ingredients. Blend for a few minutes until smooth. Transfer to a bowl. May need to add more water, lemon, salt & pepper - season to taste & consistency you like. Drizzle with extra virgin olive oil. Place in fridge when cold, if not eating straight away.
