Gluten Free, Seed Filled, Delicious, Nutritious BREAD

I save a lot of recipes, some I make and some get left by the wayside but when I saw this one I knew I had to try it, to share with you all and to spread the word that it is possible to make bread that is SIMPLE, DELICIOUS, NUTRITIOUS.

On the hunt for THE go-to recipe then this is it. Absolutely love the way @mynewroots put this together, mixing it straight into the loaf pan! What a great idea.

Packed full of fibre, protein and good fats, so you are only going to feel great and wholesome eating this, never mind how it has a brilliant profile for keeping blood sugar levels stable and being amazing for your gut, mental health, joints, cholesterol. Super filling and so full of protein you could even just eat with a little butter, ghee or avocado.

Here is the original recipe - I haven’t changed a thing and for good reason, because it is perfect just like it is. I did cook for longer than the original recipe said, mainly because I didn’t hear the timer go on the oven but it turned out perfect so I’d say you can give it an extra 20 mins and it will be just fine! Anyway I’m so happy to have made it and shared with you. ENJOY!!!

135g sunflower seeds

90g flax seeds

65g nuts (I used almonds)

145g oats

2 tbsp chia seeds

4 tbsp psylium husk

3 tbsp olive oil

350ml water

1 tsp salt

Mix all the dry ingredients in a lined loaf tin, mix together the oil and water and pour over the dry ingredients and mix well until everything is combined into a thick dough. Smooth out the top and leave for at least 2 hours.

Place the bread into the oven at 175C for 20 minutes then remove the bread from the loaf tin and flip upside down to bake for a further 40 minutes. (I cooked it for 20 mins + 60 mins, so just keep an eye on it and will depend on your oven)

Let cool, slice and enjoy!
