
Gluten free and vegan. Even if you do eat animal proteins it’s still great to include some vegetarian and vegan meals for balance and varied nutritional profile.
Root vegetables are a great source of carbohydrate mixed with chickpeas which are a low fat, high fibre protein, great for gut health. And a happy gut = a happier brain.
RECIPE
Slice and roast, in extra virgin olive oil, for 45 mins….
*Baby carrots, I had purple orange and yellow
*Aubergine
*Red Pepper
*Fennel
*Beetroot
*Onion
*Garlic
Add a tin of chickpeas for the last 15 mins in the oven.
Dressing:
*Large tbsp coconut yogurt
*Large tbsp tahini
*Juice half lemon
*1 crushed garlic
*4 tbsps warm water
Stir well
Drizzle over roasted tray bake
Finish with a scattering of fennel fronds
Serve with greens!
