The fact is you really can’t beat an egg for a quick breakfast or lunch option and they are so versatile.
Eggs of course are are high in protein and one of the few foods that contain vitamin D, a vital nutrient to all health, involved in immune function and one in which I’d say almost everyone is lacking.
Tonight is the start of Nutrition Reboot 2020, a course I run that educates people in all areas of nutrition looking for sustainable and healthy changes, and I have made a few dishes for them to try one of which is this frittata.
It may not be the most exciting but this is such a versatile dish: it can be eaten warm or cold. You can add so many vegetables or flavours into it. Great for breakfast, lunch or a light dinner. Can be eaten alone (as it is full of veg) or with a lovely rocket salad.
Also importantly a great way to be organised, and ensure you have something healthy and filling to grab if you are in a hurry as it can be made in advance of eating. And easily transportable so excellent to take to work for lunch if you’re trying to stay away from sandwiches!
Simple. Delicious. Nutritious.
If you are vegan in theory but struggling in practice then my advise is to add the eggs in and keep the dairy and meat out. That is one really valid option and remember.... you are your own boss.... nothing you do is wrong! -
