Winter Salad


✨This gorgeous looking and delicious tasting salad takes just a minute to prepare. But because it is nutrient dense, I warn you it will take longer to eat than a minute ! - which is a great thing as it means it will keep you feeling full for longer. ✨People tend to be wary of salads in winter, but don’t be! Eating some raw food every day is a brilliant way to consume extra nutrients, without losing anything to the cooking process. And this salad is HIGH in antioxidants, enhancing your immunity and slowing down the ageing process - who doesn’t want that!? Always aim to eat some dark foods every day, such as beetroot, blueberries, purple carrots, red cabbage, pomegranate, purple sprouting broccoli. ✨I always use large handfuls of herbs in all my cooking and especially salads, as much for the taste as anything. However the plus side with herbs is they are extremely important for liver support, an organ that we really need to look after for detoxification. And let’s face it we live in a pretty toxic world, so looking after your liver is vital. Especially so if you are going through any stage of menopause or have other hormone imbalances. WINTER SALAD: 100g red cabbage 25g flat leaf parsley 25g coriander 20g walnuts zest of half an orange  2 tsps extra virgin olive oil 2 tsps apple cider vinegar (optional) Squeeze of an orange Salt and pepper to taste

Chop well. Combine all. Eat! 💕Simple. Delicious. Nutritious.
