Vietnamese noodle salad

👉A noodle salad is so versatile and delicious.


👉Egg, rice or buckwheat noodles are great.


👉Always include a protein, maybe tofu, salmon or shredded chicken.


👉Add lots of herbs and some vegetables or salad ingredients. These could include Bean sprouts, grated carrot, spiralised courgette or cucumber, shredded cabbage...


👉Something crunchy for texture: nuts or seeds are ideal


👉For a simple dressing just drizzle sesame oil, rice wine vinegar, soya sauce and lime


Tonight these are the ingredients I used:

✨Buckwheat soba noodles cooked and rinsed in cold water.

✨Silken tofu@clearspringukmashed and scattered over the noodles.

✨Roasted aubergine, broccoli and Edemame beans.

✨Toasted seeds - sunflower, pumpkin, sesame - in tamari soya sauce.

✨Chopped mint, coriander and spring onion.

✨Dressing: tahini, sesame oil, tamari soya sauce, apple cider vinegar, date syrup, lime.


Simple. Delicious. Nutritious.
