Veggie Supper Bowl: Bursting with flavour and fibre!⠀

✨Since lockdown I discovered a new ingredient that I recommend you look out for, coconut milk powder @bionaorganic (swipe right to see). I don’t always want to use a whole tin of coconut milk so this is a perfect ingredient to have in the cupboard. Easy to add a spoonful to sweet and savoury dishes like curries, smoothies, soups. In this recipe I mixed 1 tbsp of coconut powder with a little water, lime juice, fish sauce and poured it into my pan near the end of cooking, creating a creamy tasting rice without a heavy sauce. ⠀

✨I used a mixture of leftover black wild rice and white basmati rice. They work excellently together, as the nutty flavours of the wild black rice are offset by the tender soft texture of the basmati. When I cooked mine the previous day, I cooked the black rice for 20 mins in the pan on its own and then added the basmati for another 10 mins.⠀

✨The cashew nuts are a prefect protein in this dish, but if you prefer you could use tofu, chicken or salmon.⠀

✨The Kaffir Lime Leaves make this dish, with the most incredible fragrant aroma and flavour, ideally use fresh if you can get them.⠀

📝Recipe, serves 2:⠀

1 tbsp sesame oil⠀

1 clove garlic, roughly chopped⠀

10 kaffir lime leaves, finely sliced⠀

1 bag of tender stem broccoli, sliced up⠀

1 carrot, grated⠀

1/4 white cabbage, shredded⠀

1 red chilli, chopped finely ⠀

1 large handful of cashew nuts⠀

2 portions of leftover rice⠀

In a small jug mix together:⠀

1 tbsp coconut milk powder with 1 tbsps of water⠀

2 tbsps fish sauce⠀

1 tbsps Tamari soya sauce⠀

Juice of half a lime⠀

👉In a wok or large pan heat the oil and add the vegetables first, stir for a few minutes. ⠀

👉Add the garlic, lime leaves and cashew nuts. Keep stirring on a medium heat until you can smell the flavours coming out and see the vegetables soften.⠀

👉Add the rice, stir well and cook for a few mins until piping hot.⠀

👉Add the sauce in the jug, stir well and keep cooking for a few more minutes. ⠀

👉Taste and season with more fish sauce, soya sauce, lime juice as you prefer.⠀
