Spinach and Feta Lasagne


👌Dinner last night was a great hit. My daughter has recently discovered she likes the spinach and feta combo, so I made this lasagne, full of veg and using Haricot beans*. These are a really nice way to add pulses to a dish like this lasagne, without being noticed as they are tiny, soft and perfect. Pulses are great as they are high in fibre and protein and they add variety and balance to a meal like this.


💥It’s important that we all eat a diet high in fibre for good digestive health. Kids often miss this out of their diet. Constipation is a huge issue that I see often in women and children. So understanding how to add more fibre to your diet is a really vital part of optimal health. And this meal is a perfect way to eat a delicious and nourishing meal whilst feeling like you are eating something indulgent.


*Alternative to the beans, if you prefer, you can also use a block of firm tofu crumbled in, which works like magic with the ricotta and feta.

Recipe, serves 6:

If you are less people, you can divide into two, using foil containers and put one layered but uncooked lasagne in the freezer for another time!


Preheat oven to 180C


Spinach Mix:

1 packet of purple sprouting broccoli, chopped into small bitesize pieces and steamed till soft. (You could use any other veg, like broccoli, kale, cauliflower)

3 x 100g bags spinach, wilted, drained and chopped

1 carton of ricotta

1 pack of feta

3 tbsp grated parmesan

1 tin haricot beans* -

(Another protein option instead of the beans is a pack of firm tofu crumbled)

2 onions chopped and roasted (optional)

Salt & pepper to taste


As each part is done put into a large mixing bowl. Mix well.


Tomato sauce:

1 red onion

1 red pepper

1 tin chopped tomatoes

1 tbsp tomato puree

2 tsp oregano

3 cloves garlic

1 glug of red wine


In a pan fry the onion and pepper in some olive oil for 5 mins until starts to soften. Add all the other ingredients, bring to a boil, put on the lid and simmer for 20 -30 mins. Blend with a hand blender.

Layer lasagne:

*Thin layer of tomato sauce

*A layer of lasagne sheets

*The spinach mixture

*A thin layer of tomato sauce ( I use a pastry brush to gently cover the whole area)

*A layer of lasagne sheets

*The rest of the spinach mixture

*A layer of lasagne sheet

*The rest of the tomato sauce

*A good sprinkle of parmesan, salt and pepper


Bake for 45 mins, until golden and soft, at 180C

Serve with a green and tomato salad
