Simple and DELICIOUS Vegetable Curry

Basic principle of an easy vegetable curry: ⠀

💥Chop up all the veg.⠀

💥Fry in some coconut oil.⠀

💥Add the spices and cook for a few minutes.⠀

💥Add the wet ingredients.⠀

💥Stir and simmer for 30-40 mins.⠀

💥Add spinach at the end to wilt.⠀

💥Serve with rice, chopped chilli, onion, coriander, coconut yoghurt.⠀

Veg (~one of each)⠀

🍆Aubergine⠀

🌶Pepper⠀

🧄Garlic⠀

🍠Sweet potato⠀

Tin of chickpeas⠀

🥬Bag of spinach⠀

Spices (~ 2tsp of each)⠀

♨Garam masala⠀

♨Turmeric⠀

♨Tamarind paste⠀

♨Curry powder⠀

Wet ingredients⠀

🍅Tomato: fresh and tinned⠀

🥥Small tin of coconut cream ⠀

Simple. Delicious. Nutritious.⠀
