Made this incredible soup today, I seriously recommend you try it. Inspired by the great @DeliaonlineBorlotti and Pasta Soup, this one is a bit lighter and quicker.⠀

I would always recommend using herbs and spices in your cooking for their powerful medicinal qualities, and this soup is delicious with the rosemary, slightly unusual and warming.⠀

✨Rosemary is an amazing stimulant, great for cognition and for someone with a low appetite, such as after an illness.⠀
✨It strengthens memory, helps to boost the immune system and is often used for digestive issues like heartburn and gas⠀
✨Like garlic it is a potent antioxidant and highly anti-inflammatory⠀

Recipe:⠀
1 dessertspoon of ghee, butter or olive oil⠀
1 onion finely chopped (white or red doesn’t matter)⠀
2 large cloves of garlic crushed⠀
1 red pepper⠀
2 tins of beans - I like borlotti or cannellini or a mix of both for this. Could also use butter beans, or another soft white bean.⠀
2 sprigs rosemary, leaves removed and finely chopped⠀
2 tbsps tomato puree⠀
Half a punnet of tomatoes, or 1 large tomato or a handful of cherry tomatoes chopped ⠀
Stock, vegetable or chicken as you prefer⠀

*Melt the ghee, add the chopped onion, garlic and pepper, stir and allow to cook down for a few mins. ⠀
*Add the chopped rosemary and the tomato puree and cook for a minute. ⠀
*Throw in the tins of beans.
*Finally add the fresh tomatoes and stock. ⠀
*Bring to the boil and then lower to a simmer for 20 mins. ⠀
*Blend. Taste. Add salt and pepper as you like it.⠀

Sprinkle with toasted seeds, chopped avocado, some roasted red pepper, fresh dill, a drizzle of chilli oil ⠀
