Perfect Fluffy Quinoa


Quinoa Dinner⠀

I have got cooking quinoa down to a fine art now….😇⠀

✨1 cup quinoa to 1.5 cups water

✨Simmer for 10 mins with lid on

✨Then turn off the heat and leave for at least another 10 mins⠀

☀This salad was perfect for a warm summer evening. ⠀ 💛Simple 💛Delicious 💛Nutritious 👉Roasted 2 red peppers and 1 red onion for 20 mins whilst quinoa was cooking

👉Steamed broccoli⠀

👉Quarter to half a tin of chickpeas⠀

👉Savoury seed mix (see previous post for details)⠀

👉A handful of flaked almonds⠀

👉Chopped parsley⠀

👉Salt and pepper

You could add feta which would change the whole tone and I do love feta so much but not tonight. Or half an avocado for some extra good fat.⠀
