I am just a bit obsessed by soup😁
Obviously the freezing cold weather helps, plus the speed with which i can make a huge pan of delicious nutritious food that works for the whole family, transforming some simple veg into a creamy thick filling meal.
I love the variety, I love that I can use up leftover bits and pieces.
I love soup for lunch when I’m working, I love that for clients who want to lose some weight it can be a really filling, joyful bowl of food, and I also love that you never quite know what you are going to get.
And if you swipe across you will see that in fact in this soup the protein source is almonds. These are gorgeous in a soup, especially great if you find pulses and beans hard to digest. Why not give it a try?!
So this soup includes ghee, stock, 2 leeks, a handful of cavolo Nero, a cup of peas, a couple of shitake mushrooms, a large handful of almonds, a potato, garlic, parsley and thyme.
Don’t forget to always add protein to soup to make sure it fills you up and is satisfying!
And of course you don’t have to eat soup on it’s own. Crackers and hummus or avocado are a great accompaniment, to ensure it’s a complete and filling meal.
Or a cup of soup can be a perfect alternative afternoon snack to get you through to dinner if you are trying to get into healthier habits this new year.
