🍚You can use noodles or rice instead of quinoa. And any vegetables you have are great, although the addition of pineapple is really important and worth a try! Of course if you don’t want to use tofu replace with any protein of your choice, but this is a nice way to eat tofu and so easy.⠀⠀⠀

Recipe for 4:⠀⠀⠀
*2 tbsp sesame oil ⠀⠀⠀
*One large onion, roughly chopped. Can be red, white or spring onions, whatever you have to hand.⠀⠀⠀
*A couple of medium carrots, peeled and finely sliced.⠀⠀⠀
*A pepper, any colour that you have, sliced into thin lengths (I used red and yellow mini peppers here)⠀⠀⠀
*Bag of green beans, diced into bitesize pieces, and steamed until soft.⠀⠀⠀
*1/4 of a fresh pineapple cut into small chunks ⠀⠀⠀
*1 pack of tofu - I used silken here, cut into small chunks⠀⠀⠀
*4 cloves of garlic crushed⠀⠀⠀

*300g quinoa⠀⠀⠀
*450g water⠀⠀⠀
⠀⠀⠀
Optional:⠀⠀⠀
*1 red chilli chopped finely⠀⠀⠀
*1 inch freshly grated ginger (added in with garlic)⠀⠀⠀
⠀⠀⠀
Sweet and Sour Sauce:⠀⠀⠀
*3 tbsps Tamari soya sauce⠀⠀⠀
*3 tbsps rice wine vinegar, or any vinegar you have available⠀⠀⠀
*3 tbsps tomato ketchup⠀⠀⠀
⠀⠀⠀
Method:⠀⠀⠀
✨Rinse quinoa, add to pan with water. Bring to boil and simmer with lid on for 8-10 mins until all water absorbed. Turn off and leave until ready.⠀⠀⠀
✨Add all sauce ingredients into small pan, stir and heat until simmering. Turn off until vegetables ready.⠀⠀⠀
✨Heat oil in a wok. Add onion and cook for a few mins.⠀⠀⠀
✨Add carrots, peppers and garlic. Stir fry until start to soften, 5 - 7 mins⠀⠀⠀
✨Add beans and pineapple. Cook for a few mins.⠀⠀⠀
✨Finally add tofu and sauce. Turn up heat for a minute and keep stirring.⠀⠀⠀
✨Add quinoa and give a final mix before serving.⠀⠀ ⠀
