I love pasta sauces but sometimes pasta for dinner feels heavy and hard to digest. This is a fab alternative. It’s surprisingly filling without making you feel too full and bloated. Perfect for anyone with a gluten intolerance, or those just trying to cut down on carbohydrates at dinner time.
Pasta sauce was made with:
Extra virgin olive oil, onion, celery, aubergine, red pepper, puy lentils, a few olives and capers, garlic, fresh basil, dried oregano, a tin of chopped tomatoes and Passata, tomato purée (I love Bomba!@laurasanttini), a small glug of red wine, and simmer for an hour.
