Broccoli Pizza


Need some inspiration for a delicious, light and super healthy mid-week dinner?! Look no further than this delicious broccoli pizza that I made for dinner last night.


Super easy, even more so than other cauliflower or sweet potato pizzas I’ve made in the past.


Broccoli is so good for you - it contains huge amounts of a compound called sulphorane, evidence suggests that this nutrient can prevent DNA damage that leads to cancer.


But…. if you’re getting bored of steamed or roasted then this is a revolutionary way to use it, and it really did work so well. You could use other toppings of course, and make it your own with seasonings of your choice. You could eat as is, or with a mixed salad or just have it as a vegetable side for fussy kids who don’t love their vegetables?


SO how do you make this?!

Ingredients:

1 head broccoli, approx 300g

2 eggs

1 tsp garlic granules

2 tsp pesto

Tomato Sauce: in a pan fry one red onion chopped and 3 cloves garlic. Add a tin of tomatoes, a glug of red wine if you have any open, a couple of olives sliced, a tablespoon of tomato puree, oregano, salt and pepper. Put the lid on and simmer for 20 mins, Blend.

Instructions:

Chop off the head of the broccoli, florets and some of the stalk and blend finely.

Put this into a bowl.

Whisk the eggs and mix into the broccoli along with the garlic and pesto.

Mix together well

Add some oil to your pan and add in the wet mixture.

After a few mins you can turn it out onto a plate and then slide back into the pan.

Cooked for another 5 mins.


Add the tomato sauce and smother the top almost to the edge.

Add grated cheddar and put a lid on the pan for a couple of minutes until melted.

Serve immediately with a crunchy green salad.
