Asian-Style Brunch: Nasi Goreng

Love an Asian brunch dish, you just cannot beat egg with vegetables and rice combined with fantastic flavours and spices.⠀

Nasi Goreng - Indonesian stir fried rice - a favourite of my family from distant but happy travels abroad.

If you are starting to get bored of the same old food definitely try this for a perfect weekend breakfast/brunch/lunch.⠀

Recipe:⠀

✨Either use leftover rice or cook enough rice for yourselves and set aside.⠀

✨In a large wok fry garlic, onion, a pepper, large grated carrot, spinach, peas and corn (but really any veg will do). When soft enough set aside in a bowl and make your sauce:⠀

✨In your wok add 1 tbsp each of Kecap Manis (an Indonesian sweet soy sauce), light soy sauce, chilli sauce and tomato purée, with grated ginger and extra garlic if desired. Or if you can get hold of a Nasi goreng paste add this and fry for a minute. ⠀

✨Add back into your pan your cooked rice and veg and stir together.⠀

✨Fry eggs and place gently onto a pile of steaming rice.⠀

✨Finish off with extra chilli and crispy onion for good measure!
