7 Mins Super Charged Immunity Boosting Soup



Who doesn’t need a boost to their immune system right now?! There is a lot of stuff going around and the temperature has dropped

Let’s face it, there has never been a more important time to look after your health…. It’s pretty high up on my list of things to do that’s for sure!!

I felt slightly heady last weekend and without much time threw this soup together and it worked! It was the perfect antidote and really hit the spot.

Boosting your immune system with nutrition is so delicious, using fabulous medicinal foods like garlic, ginger, shitake mushrooms and miso.

Mushrooms may be one of the ultimate foods when it comes to “food as medicine”. There are some incredible mushrooms that possess amazing immune boosting properties, aid digestion, are anti-viral and help relieve stress and anxiety. If all you’ve ever known are button mushrooms and you have any health concerns then it’s a super interesting area to look into.

✅Shitake mushrooms are probably one of the better know and most accessible immune boosting mushrooms and one that is incredibly easy to add into your culinary repertoire. They contain a compound called lentinan, that helps fights fungal, bacterial, viral and parasitic infections.

✅If you can’t get hold of fresh, then all Asian supermarkets have plenty of dried mushrooms. A great store cupboard ingredient, you can throw them into plenty of recipes. Ideas of ways to add mushrooms into your diet include:

Recipe:

Cup of dried shiitake mushrooms

4 cloves garlic

1 inch ginger

Large handful each of shredded green and red cabbage (or other veg you have to hand)

1 spoon Ghee (or other oil of your choice)

1 spoon miso paste

1 pack tofu

3 spoons or 1 small tin of Kimchi

1 spoon Gochujang chilli paste

Soak the mushrooms in hot water for 5 mins

Satutee garlic and ginger in ghee, coconut oil or olive oil for 2 mins

Add shredded cabbage and cook for a few mins to soften down.

Add miso paste, the soaked mushrooms and the water they were in, along with a pint of stock - I used a mushroom stock cube but you could use whatever you like or have.

Add tofu - I used @cauldron marinated tofu - but any you have will be great for your protein source.

Finally add the kimchi and Gochujang

Stir well. Eat piping hot.
