
I have a thing about washing up - I hate it! So now i only make loaves that use one pan - it's easy and tastes great.
Ingredients:
100g coconut oil (lovely healthy fat that tastes great in banana loaf)
40g chopped dried dates
60g brown sugar (some sweetness but not too much - use a date syrup or equivalent if you like)
1 tsp cinnamon (or more if you fancy, or none if you don't)
2 tsp baking powder (to help it rise)
2 ripe bananas mashed (~225g) (if you use more it will be more moist)
220g wholemeal spelt flour (or equivalent)
30g chopped pecans (or more if you love them)
50g chopped walnuts (or less if you're not so keen, but they are one of the most nutritious nuts)
2 tbsps ground almonds (just because...)
3 large eggs whisked (great protein source & helps make the loaf a loaf!)
Method:
In a large'ish saucepan:
- melt the coconut oil & sugar together gently
Once melted, add the following ingredients one at a time & after each, give a little mix
- mashed banana
- the nuts
- the flour, ground almonds & baking powder
- finally when all of those things are mixed in, add the eggs & beat together until you have a lovely batter
- pour into a loaf tin (I use a liner so it's super easy)
Bake for 40-45 mins at 180 degrees
Eat warm, delicious spread with coconut oil or butter
Add a slice to your kids lunchbox
Great for breakfast if you are rushing
