A Super Healthy Sweet Snack: Cinnamon Split Peas


My Post-Summer Nutrition Reboot class started last night. 8 women for 8 weeks, all looking for some inspiration. Here's just one of a few recipes, an easy snack, high in protein and fibre, tasty and simple.

What more can you ask?!

Split Pea Sweet Snack

"Split Pea Sweet Snack" may be a mouthful, but the snack is yummy and easy to make, so don't be fooled by the name!


Ingredients:

1 cup yellow split peas

1/2 tbsp coconut oil

1tsp cinnamon

1 tbsp coconut flakes

1 tbsp date syrup (or other alternative such as maple syrup)

Instructions

  1. Rinse peas, then place in a pan. Add water until about 2 inches above the lentils. Bring to a boil. Reduce heat to a low simmer and cook for 30 minutes, until tender, stirring occasionally.

  2. Preheat oven to 200C. Place coconut oil on a tray in the oven to melt (1-2 mins)

  3. Drain lentils, and then place on tray with melted coconut oil. Toss with remaining ingredients.

  4. Spread lentils in a single layer. Bake for 10 minutes. Stir, and then bake for another 10 minutes, until fully crunchy, may need another 10mins. Keep an eye on them during the last few minutes so as not to burn. Let cool before storing in an airtight container.
