Kale, Walnut and Avocado Salad

I love making an easy lunch when I'm working from home. So quick, delicious. With the perfect ingredients to make you feel extremely healthy, yet decadent.

Ingredients for 2

1 packet of kale (could also use other greens like cavolo nero, watercress, rocket, spinach)

40g walnuts

1 ripe avocado

1 orange peeled and chopped and / or pomegranate seeds

1 tsp extra virgin olive oil & juice of half a lemon


2 tbsps flaxseed oil or extra virgin olive oil

2 tbsp apple cider vinegar, 1 clove crushed garlic, 1/2 tsp dijon mustard


Wash and chop greens finely. Place in a bowl and add extra virgin olive oil and lemon juice. Massage into leaves with your hands until finely coated. Leave for 10 mins to marinade whilst preparing rest of ingredients.

Chop the walnuts and avocado into bitesize pieces. Peel and chop orange. Add to the bowl of kale, along with the pomegranate seeds. Mix all dressing ingredients together in a small container and mix well into salad. ENJOY!
