Peanut Butter Banana Breakfast Burgers

I'm always looking for interesting, inspiring, delicious, not to mention super easy recipes & have come across this fabulous one on Food52.com. It's hard to believe this is as healthy as it is & really genuinely is a gorgeous breakfast especially for kids who refuse anything but cereal normally. If you're tight for time just make a batch the day before & then pop in the oven for a few mins to warm through.

So I made them, ate them & just had to write about them because I need to share with you all: gluten free, vegan, protein filled breakfast... wow, you can't ask for more!

Ingredients:

1 tin chickpeas, drained & rinsed

2 mashed bananas (~200g)

70g oats

40g chopped walnuts

3 tablespoons natural creamy peanut butter or almond nut butter

1 tablespoon pure maple syrup

1 teaspoon cinnamon

pinch of salt

40g blueberries chopped if large

coconut oil for cooking

toppings: berries, peanut butter, jam, banana, coconut

Preparation:

Mash the chickpeas in a mixing bowl with the back of a masher.

Add in all remaining ingredients [except for the blueberries] and mix until thoroughly combined.

Fold in the blueberries until incorporated. Melt a small spoonful of coconut oil in a frying pan.

Form a small burger using the palm of your hands. Don’t worry if the mixture is quite wet, it will set as it cooks.

Place burgers in the pan and cook over medium for 4-5 minutes until golden brown. Avoid overcrowding the pan. Turn and cook for another 3 minutes until golden brown.

Eat immediately if possible served with some juicy blueberries.

If you manage to have any leftovers then regrigerate them & serve cold with a peanut butter topping!
